Farmington native Erin Pac won the bronze medal in the two man bobsled at the 2010 Vancouver Olympics last night!

My hometown is producing olympic medalists now!!

so attempting to get into my running home from work schedule.

felt all sorts of motivated last night for some reason and decided today (tuesday, the day after said motivated night) would be the kick-off to "work-out while commuting, take two". (also that I should stop eating whenever I get bored, but that's a whole 'nother thing)

so what does the weather do to help me out?

rain.

a lot.

all day.

good thing I have a kick-ass new running playlist on my ipod and that I enjoy running in the rain.

take that mother nature!

so apparently (according to the multiple ads on the sides of buses) it's Cadbury Creme Egg season, and it lasts from 1st January to 4th March.

and I don't know why, but that amuses me.

We tried this chicken recipe last night.
Bacon.
Cheese.
Mustard.
Another type of cheese.
You really can't go wrong.

And we were right.
It. Was. Delicious.

And I'm not just sayin that cause I'm eating the leftovers for lunch right now.


Ingredients:
-125g ball mozzarella , torn into small pieces
-50g strong cheddar , grated
-1 tbsp wholegrain mustard
-4 skinless boneless chicken breast fillets
-8 smoked streaky bacon rashers

Directions:
1. Heat oven to 200C/fan 180C/gas 6.

2.Mix the cheeses and mustard together.

3.Cut a slit into the side of each chicken breast, then stuff with the mustard mixture.

4.Wrap each stuffed chicken breast with 2 bacon rashers - not too tightly, but enough to hold the chicken together.

5.Season, place on a baking sheet and roast for 20-25 mins.
